image1I’m starting something new here on my blog. Previously, I had posted my weekly dinner menu on my Facebook page, but I’ve decided to start sharing it here instead. I would love to hear what’s on your menu this week, too.

I’m heading to the annual Beachbody Coach Summit in Nashville at the end of this week, so this is an abbreviated menu. I haven’t had full use of our kitchen, either, for the last several weeks as it is under construction. (More on that in another blog post.) Not being able to use my kitchen may explain my recent cookbook explosion – I just recently bought the “Skinnytaste Cookbook”, “Inspiralized” and “Fixate” is being released this week. There are so many new recipes I want to try. I’ll be picking up “Fixate” at Coach Summit this week and that will round out my ‘trifecta’ of new cookbooks. What is your favorite healthy cookbook?

My plan for this week is to double my recipes early so I know there will be leftovers for my family while I’m away.

Monday: Baked Chicken Fajitas
Tuesday: Zucchini Pizza Lasagna (premium recipe from Dashing Dish)
Wednesday: Leftovers or dinner at church
Thursday: Coach Summit!
Friday: Coach Summit – dinner with Team Iron!
Saturday: Coach Summit!
