Our Wednesdays are always really busy with piano lessons, tutoring appointments, and driving all over the place. A friend recommended Zoe’s Kitchen to me a few months back. I learned that I could place our order ahead of time online, and it’s ready to be picked up when we arrive. (I would love it if they had a drive-thru, but it only takes five minutes to run in and pick it up.)

For lunch, I had the chicken kebab entree with a side of roasted veggies. I requested light oil on the veggies (just trying to keep them healthy!). I used to order this with the Greek side salad, too, but I prefer just the roasted veggies.

If there is one thing I have learned since I started doing the 21-Day Fix, I don’t eat enough veggies. I am supposed to eat three green containers per day when following that eating plan. On days I don’t plan ahead, I will get to dinner and still need to eat all three containers. Have you ever tried to eat three cups of broccoli all at once?! It’s a little much. I have tried to be more intentional about eating veggies throughout the day. Now I grab baby carrots as snacks when I want something crunchy; I order food like this at Zoe’s; and I’ll sometimes saute spinach to go with my eggs for breakfast in the morning.
